Add these hickory cooking chunks to your smoker and let's get everyone's mouth watering.
Wash your whole potatoes and brush with olive oil or make your own herb based oil to apply to the skin
Place in your 240 degree heated smoker for approximately 3 hours
While waiting for the potatoes to be done shred some cheese, grill up some bacon, fry some onions whatever you think will make these even better. Once the 3 hours are up carefully cut the potatoes in half and scoop out the insides (make sure that you leave enough of the outside to hold the filling). Mash up the potatoes adding whatever you want, including some seasonings. Remember that you can always add the cheese and bacon on top of the filled potato skins. Return the potatoes to the smoker for an additional 30 minutes.
Once done remove from the smoker and serve with a side of sour cream or herb butter.
